Through a small project event, OTTIMMO’s students express their culinary skills

Surabaya — The first-year Culinary Arts students and the second-year Baking & Pastry Arts students at OTTIMMO International recently collaborated on an amazing small project event. Students were able to test their knowledge and practical abilities by organizing, preparing, decorating, and serving in a real restaurant-style setting at the event, which was held on the OTTIMMO International campus.

The project was divided into three main concepts: Fine Dining (Japanese food), À la Carte (Malay cuisine), and Buffet (French, Italian, and Spanish cuisine). In a real-world simulation that tested their culinary and hospitality skills, each group was in complete control of their own restaurant theme, menu design, room décor, and guest experience.

Based on the designated topic, students were encouraged to make their own meals and pastries. Additionally, they had to extend an invitation to dine at their restaurant and make sure that every detail, including the menu and table settings, was carefully considered and expertly done.

Each group was organized similarly to a front-of-house and professional kitchen crew. The Head Chefs, Chef de Partie (CDP) for the Culinary and Pastry departments, Service Leaders, and Team Members were appointed. By serving as serving staff and baristas and making sure that every plate and cup delivered complied to professional standards, the service crew was in charge of providing the greatest possible guest experience.

One of OTTIMMO’s signature academic programs, this modest project’s goal to develop students’ leadership, collaboration, creativity, and practical knowledge in a controlled setting that focuses inspiration from real life. The project was a huge success, demonstrating once more how OTTIMMO International continues to develop the next generation of culinary and pastry leaders with inventiveness evident in every dish and design. OTTIMMO International Celebrates its 11th Dies Natalis Event: “Eleven Steps to Unity”

Surabaya, April 29, 2025 – On Tuesday, OTTIMMO International celebrated its 11th Dies Natalis with a succession of lively and entertaining activities organized on the campus. Under the theme “Eleven Steps to Unity,” this event united all students and staff in a celebration that was characterized by unity, laughter, and vitality.

The morning commenced with a joyful Fun Walk through the Citraland area, which aimed to foster a sense of community and wellness. A variety of thrilling competitions extended the enjoyment, including : Blow the Balloon, Tarik Tambang, Cup Pong, Estafet Sarung and Estafet Karet, and Best Costume.

Both students and staff enthusiastically participated in the event and maintained a positive attitude throughout the day. Particularly, the competitions for Tarik Tambang and Best Costume generated the most enthusiasm. With boisterous applause and eager people who had come to watch the captivating play, the Tarik Tambang bout was particularly fierce.

The party concluded on a high note with a door prize giveaway, which brought delight to a number of lucky winners. More than just a significant occasion, this 11th anniversary was a lively representation of the enthusiasm, solidarity, and inventiveness that characterize the OTTIMMO community.

Hangatnya Kebersamaan: Mahasiswa OTTIMMO Berbagi Kebahagiaan di Panti Asuhan Hajjah Jawiyah Badrie

Akademi Kuliner dan Patiseri OTTIMMO Internasional bersama dengan mahasiswa kelas Philosophy of Religion ramadhan lalu sukses mengadakan kegiatan bakti sosial bertajuk “Hangatnya Kebersamaan: Berbuka Puasa dan Dekorasi Masakan Bersama” di Panti Asuhan Hajjah Jawiyah Badrie. Kegiatan ini bertujuan untuk menumbuhkan rasa kepedulian sosial, mempererat hubungan antar sesama, serta mengajarkan nilai-nilai toleransi melalui interaksi langsung dengan anak-anak panti asuhan.

Acara dimulai dengan sambutan dari pengasuh panti asuhan, yang menyampaikan rasa terima kasih atas kehadiran mahasiswa dan kepedulian yang diberikan kepada anak-anak panti. Setelah itu, mahasiswa mengadakan games pembuka untuk menciptakan suasana yang lebih akrab dan menyenangkan. Antusiasme anak-anak panti sangat tinggi dalam mengikuti setiap permainan yang dibawakan, terutama karena adanya hadiah menarik yang diberikan kepada pemenang.

Sesi utama dalam kegiatan ini adalah dekorasi makanan, di mana anak-anak panti diberikan kesempatan untuk menghias cupcakes dengan berbagai topping warna-warni serta menyusun hotdog sesuai kreativitas mereka. Mahasiswa OTTIMMO terlebih dahulu memberikan contoh cara menghias makanan dengan menarik, lalu anak-anak mengikuti dengan semangat. Selain memberikan pengalaman seru, kegiatan ini juga melatih kreativitas anak-anak dalam dunia kuliner. Tidak hanya itu, mahasiswa dan anak-anak panti berinteraksi lebih dekat, menciptakan suasana kekeluargaan yang penuh kehangatan.

Sebagai penutup, mahasiswa OTTIMMO membagikan menu berbuka puasa kepada anak-anak panti asuhan sebagai bentuk kepedulian dan berbagi kebahagiaan di bulan Ramadan. Selain itu, mahasiswa OTTIMMO juga membagikan goodie bag yang berisi bingkisan menarik sebagai kenang-kenangan dari kegiatan ini. Kegiatan ini tidak hanya memberikan kebahagiaan sesaat, tetapi juga diharapkan dapat menanamkan nilai kebersamaan dan kepedulian sosial di hati setiap peserta. Dengan adanya kegiatan ini, mahasiswa OTTIMMO semakin menyadari pentingnya berbagi dan membangun hubungan sosial yang harmonis dengan masyarakat. Wajah-Wajah Baru CASO Terukir di Mojokerto dalam Acara Leadership Training Camp 2025

Seluruh jajaran CASO (Culinary Arts Student Organization) terpilih, periode tahun 2025 telah mengikuti Basic Leadership Training Camp yang diadakan di Kec. Pacet, Kab. Mojokerto tepatnya di The Alit Establishment pada tanggal 5-7 Februari bulan lalu. Diadakannya camp ini mengajarkan berbagai makna penting mengenai kepemimpinan melalui games dan aktivitas yang meningkatkan solidaritas antar satu sama lain sekaligus meresmikan jajaran CASO yang baru.

Dimulai dari hari Rabu, 5 Februari 2025, semuanya berangkat dari OTTIMMO International menggunakan bus didampingi oleh para pembina. Setelah menempuh perjalanan sekitar 2 jam, rombongan sampai di lokasi dilanjutkan kegiatan pembagian kunci kamar, makan siang, serta opening ceremony. Setelah sedikit ice breaking dan pembagian group, kegiatan selanjutnya adalah Yelling Group Competiton, lomba saling beradu yel-yel untuk menentukan mana yang terbaik, para anggota CASO nampak semangat dan antusias. Tidak lupa untuk melepas kepenatan anggota CASO memainkan berbagai games ringan, salah satunya berupa estafet ping pong. Rangkaian kegiatan di hari pertama, diakhiri dengan makan malam bersama di Resto The Alit dan meeting internal membahas penyusunan berbagai proker tiap divisi.

Hari kedua dimulai dengan kegiatan senam pagi, kemudian dilanjutkan dengan sarapan bersama, ice breaking, serta diakhiri dengan senam otak yang menuntut konsentrasi dari masing-masing individu untuk menyelaraskan gerakan tangan maupun jari-jari menyesuaikan instruksi instruktur. Menjelang siang suasana semakin meriah saat final games dimulai, dari lomba menyusun berbagai benda hingga berbentuk stickman, menaruh bola dengan tali ke atas pipa, menahan bola dengan tali di atas gerobak, serta masih banyak lainnya. Hari itu ditutup dengan makan malam dan pentas antar kelompok yang mana puncak kegiatan camp sebab setiap kelompok menampilkan penampilan terbaik mereka, ada yang senam, menyanyi, dan penampilan seru lainnya. Pengumuman pemenang menjadi momen paling ditunggu, begitu pemenangnya terpilih langsung disambut dengan meriah oleh anggota kelompok lain dan tentu tidak lupa apresiasi dari para pembina dan instruktur. Menutup keseruan malam itu para pembina beserta peserta CASO camp berfoto bersama sebagai kenang-kenangan.

Aktivitas susur sungai mengawali kegiatan di hari ketiga. Setelah tenaga terkuras setelah menyusuri sungai, sarapan setelah itu menjadi kunci mengisi tenaga kembali. Lalu mereka dipersilahkan untuk kembali ke kamar untuk bersih diri dan persiapan check-out. Kemudian dilanjutkan dengan kegiatan meeting internal membahas proker setiap divisi.

Melalui camp 3 hari yang dilaksanakan ini, banyak aktivitas seru dan juga bermanfaat bagi anggota CASO. Dari camp ini, para anggota CASO belajar melatih leadership skill, mengenal satu sama lain dan juga meningkatkan solidaritas. Petra Junior Cooking Competition Season 11 : Plated Dessert

Surabaya, February 26-28, 2025 – PPPK Petra successfully held the Petra Junior Cooking Competition Season 11, an exciting yearly culinary competition, was successfully hosted by PPPK Petra at Pakuwon Trade Center. The event, held from February 26 to 28, attracted both foodies and eager tourists by showcasing the skills of young, aspiring chefs from elementary, junior high, and senior high schools.

  • February 26 – Elementary school teams (2 participants per team) had 60 minutes to complete their dish.
  • February 27 – Junior high school students competed individually, given 90 minutes to create their plated dessert and beverage.
  • February 28 – Senior high school students, also competing individually, faced the same challenge within 90 minutes.

The competition was intense and filled with excitement as participants showcased their creativity, precision, and culinary skills under pressure. Renowned culinary institution OTTIMMO International supported the event as the official judge, evaluating each dish based on presentation, taste, and creativity.

In addition to awarding winners with prestigious prizes, OTTIMMO International also provided a special scholarship opportunity for the senior high school champion to pursue further studies at their institution. The lively atmosphere was enhanced by the crowd of mall visitors who came to see the exciting culinary competition. In addition to showcasing the participants’ extraordinary talent, the event encouraged aspiring cooks to pursue their love of cooking.

As an annual event, Petra Junior Cooking Competition Season 11 once again proved to be an unforgettable experience, leaving competitors, judges, and spectators excitedly awaiting the next competition next year.

Beyond the Kitchen: OTTIMMO Supports Student Hobbies with Sports Clubs

In addition to developing students’ culinary and pastry-making abilities, OTTIMMO International supports their pursuit of interests outside of the kitchen. To assist this, OTTIMMO has established two student activity clubs: the Basketball Club and the Badminton Club.

Dinas Koperasi dan UKM Kota Surabaya Partners with OTTIMMO International to Nurture Entrepreneurial Spirit

Surabaya, Indonesia (July 18, 2024) – In a concerted effort to bolster the city’s economy and foster entrepreneurial spirit, the Dinas Koperasi dan UKM Kota Surabaya has joined forces with OTTIMMO International, with the generous support of PT. Ares Kusuma Raya, to empower Surabaya’s Micro, Small, and Medium Enterprises (MSMEs).

On July 12 and 18, 2024, a total of 40 aspiring entrepreneurs from various sub-districts across Surabaya gathered at the state-of-the-art baking pastry kitchen of the OTTIMMO International Culinary and Patisserie Academy. Sajikan Menu Khas Jawa Timur Ala Fine Dining Di Bursa Pariwisata Jawa Timur 2024

Ketika kita berwisata ke suatu daerah, hal yang tidak luput dari tujuan adalah selain pesona alamnya, juga kuliner yang ada di daerah tersebut. Melalui kuliner tersebut, maka dapat diketahui akan budaya serta hasil alam yang melimpah di daerah tersebut. Menurut survei yang dilakukan oleh Taste Atlas yang menyatakan bahwa 4,51% pembaca memilih hidangan dari pulau Jawa merupakan hidangan terfavorit, yaitu seperti rawon, pecel, batagor, soto betawi dan bubur ayam. Jika dilihat dari jenis menu yang menjadi pilihan terfavorit pembaca Taste Atlas di atas, ada satu menu yang berasal dari Jawa Timur, yaitu rawon. Melihat dari besarnya minat masyarakat akan makanan tersebut, maka kami Akademi Kuliner dan Patiseri OTTIMMO Internasional melakukan edukasi kepada masyarakat dengan menyajikan hidangan yang berbahan dasar kluwek tersebut menjadi sajian ala hotel bintang lima.

Melalui kegiatan Bursa Pariwisata yang telah diadakan oleh Dinas Kebudayaan dan Pariwisata Provinsi Jawa Timur tahun 2024, OTTIMMO International berpartisipasi melalui talkshow dan cooking demo pada hari Sabtu, 25 Mei 2024 yang berlokasi di panggung Exhibition Center Grand City Mall Surabaya. Di dalam kegiatan yang berlangsung selama 3 jam tersebut OTTIMMO International membuka dengan sesi pengenalan institusi melalui presentasi yang dibawakan oleh public relations OTTIMMO International, setelah itu dilanjutkan dengan talkshow mengenai gastronomi makanan khas Jawa Timur. Acara talkshow yang di bawakan oleh dua dosen dari OTTIMMO tersebut memberikan pemahaman kepada pengunjung mengenai keanekaragaman makanan khas Jawa Timur, serta peningkatan nilai jual makanan tradisional tersebut dengan melalui metode molekular gastronomi. Senada dengan materi yang telah disampaikan oleh kedua dosen tersebut, di akhir sesi acara tersebut, diadakan cooking demo dengan menyajikan dua makanan khas Jawa Timur, yaitu Ayam Lodho khas Tulungagung dan Rawon (Black Soup). Tentunya kedua masakan tersebut diolah dengan cara yang tidak biasa, yaitu menggunakan metode molekular gastronomi, sehingga tampilan dari hasil masakan tersebut terlihat seperti makanan di restoran internasional.

Menurut Nadira mahasiswa tingkat dua angkatan Genoa menyatakan alasan memilih menu tersebut :

“Karena kedua makanan itu merupakan masakan otentik dari Jawa Timur, selain itu pada saat ini banyak digemari oleh masyarakat. Jadi kenapa kita tidak kreasikan makanan tersebut menjadi makanan yang mempunyai nilai jual yang bagus”

Respon dari pengunjung yang menyaksikan kegiatan tersebut cukup baik, beberapa orang terlihat antusias hingga sering melontarkan beberapa pertanyaan. Melalui kreasi-kreasi dari tangan kreatif, semoga hidangan Jawa Timur semakin dapat dikenal dan digemari oleh masyarakat baik dari Indonesia, hingga mancanegara. (Baresa/Humas)
